Cottage Cheese Pancakes

These are the absolute best Cottage Cheese Pancakes!!! I learned about cottage cheese pancakes when I was in college, from one of my moms oldest childhood friends. She saw a worn at college student after exam season, at the end of my semester, and knew that I was in need of something seriously nourishing. And even in the haze of having just pulled an all-nighter writing an essay, I never forgot the pleasure of those cottage cheese pancakes!

Once I started having my own kids, cottage cheese pancakes became a meal that I continue to reach for time and time again, because of its deliciousness, how good it makes me feel, and the lasting energy it provides for me and the kids. You can rest easy knowing that you are making something that the whole family can enjoy and that everyone will be nourished by and be ready for whatever adventure comes next. 

Cottage cheese pancakes have a low barrier for entry, as they only require 3 ingredients. You can double it for more batter, eat it for breakfast, lunch or "breakfast for dinner", as we sometimes do when we need a protein packed meal ready in 15 minutes. 

For children who are wary of a new breakfast item on the scene, see if getting them involved in the mixing and/or flipping helps. It doesn't always work, but I've found that that's sometimes all it takes! I hope you and your families love the cottage cheese pancakes as much as we do!

Ingredients

  • 4 Eggs
  • 1 Heaping Cup of Cottage Cheese
  • 1/4 Cup of Flour

Directions

Step 1

Preheat oven to 150 degrees. Gather ingredients and have a baking sheet or heatproof platter ready to keep cooked cottage cheese pancakes warm in the oven.

Step 2

In a medium bowl, whisk together eggs, cottage cheese and flour, until fully incorporated and set aside.

Step 3

Heat a large skillet or pan over medium. Add oil of choice and/or butter to the pan and wait until the pan warms up to the point where the butter is sizzling on the pan. 

Step 4

For each cottage cheese pancake spoon 2-3 tablespoons of batter onto the pan and cook until golden brown on each side (about 2-3 minutes per side). 

Step 5

Transfer the cottage cheese pancakes to a baking sheet or platter to keep warm in the oven until ready to serve. Serve the cottage cheese pancakes warm with desired toppings. We usually add pads of butter and maple syrup on top. It's as simple as that! Enjoy :)

Notes on Supplies

Flour - You can use any type of flour you like for the cottage cheese pancakes. My favorite to use is this Einkorn Flour because it is an ancient wheat that has a lower glycemic index and a higher protein content than regular flours. 


Pan - This is the pan that we use for everyday cooking and while cooking these cottage cheese pancakes. I love cast iron for cooking because the skillet heats up evenly. This is a real benefit when cooking the cottage cheese pancakes, because so little flour is used it is important to cook on an even, fairly hot pan.
